Many people see roadkill as gross. Roadkill is any animal that is killed by being struck by a car. The carcass is often left on the side of the road to decompose. Large corpses, like deer, bear, or elk, are often tagged and retrieved by local public health authorities. Small animals are usually dragged away by scavengers like vultures. The words roadkill and appetizing rarely occupy the same space in a person’s brain. However, there is a subculture of people that enjoy roadkill as a meal.

Roadkill cuisine is food specifically made from roadkill collected by the cooks. Some people like the thrill of finding an edible piece of roadkill. Some people like the challenge of turning roadkill into something delicious. Others like the gamey taste and exotic flavors that come from the unusual animals that are cooked.

Roadkill cuisine is an established part of the culture in certain regions, and it has a surprisingly rich history.
